BBQ Chicken Quesadillas
We have one of those crazy nights where we are supposed to be in 5 different places. I know some of you think I make Thanksgiving feasts every night for dinner- nothing could be further from the truth! Our family is very familiar with hot dogs, pancakes and frozen taquitos. This recipe fits in that category (just with a little bit more flavor, so it makes you feel like you actually fixed something wonderful) and is for all of you crazy families that are running fast like us.

BBQ Chicken Quesadillas
cooked chicken breast, sliced or cubed
shredded cheddar or colby jack cheese
flour tortillas
BBQ sauce (we use our homemade sauce from our ribs recipe- so good!)
The directions are super simple. Pour the BBQ sauce on the chicken and stir around. Grab a frying pan or electric skillet (the large skillets are awesome for doing a big batch at the same time). Heat it up. Place the tortillas on the pan or skillet, top with cheese and BBQ chicken. Flip it after just a minute or so (when the cheese is melty, but before the tortilla burns). Pull it off the heat and dinner is served!! Throw that on the table with a bagged salad and some fruit and you’ve got 5 food groups covered, and dinner has just been prepped in minutes.

Quesadillas are a quick and easy stand by over here- usually served with salsa. I really like the smokiness the BBQ adds. Sweet, tangy and delicious! Another thing I really love is that you can prep the chicken, sauce and cheese ahead of time, so you pretty much just need to warm it up.
