Pressure Cooker Chicken

I have recently learned the wonderfulness of the pressure cooker!! My husband got me one for Christmas, and I've been experimenting with it ever since. The only draw back, is that we accidentally purchased an off brand of the Instant Pot- which is a little more tricky since it didn't come with an owners manual. And there's not one online. Weird, right?!! But with some playing around, I'm starting to figure it out on my own. One of my favorite things to cook in it is frozen chicken because it is soooooo easy and comes out super tender.
Here's how I do it:
Pressure Cooker Chicken
4 large chicken breasts, frozen (I get the Tyson brand from Costco)
1 cup water
Drizzle of Olive Oil
Sprinkle of Garlic Salt
Sprinkle of Pepper
Put everything into the pressure cooker. Cook on high for 30 minutes. (Check your pressure cooker manual- times may vary.) You can natural release or quick release when it's done, but I think it ends up even more tender with the natural release.
Super duper easy and so tender. It shreds very easily. I use it in soups, salads, tacos, stir fry, anything you can think of that calls for chicken!
