Beef Tostadas

I LOVE making these beef tostadas when I have a bunch of leftover Mexican food that I need to use up. We had these a lot when we went on our trip to Cancun (to revisit my husband’s church mission). They’re very easy to put together, and our kids love them! These are delicious served with our Mexican Style Corn on the Cob.

Beef Tostadas

Ingredients:

1 can refried beans (we like Old El Paso) - warmed up

Slow Cooked Salsa Beef (beef recipe we use in our Homemade Taquitos)

pack of tostadas (or baked corn tortillas)

1 tomato, diced

1 cup shredded iceberg lettuce

1/2 cup queso fresco

1/2 cup crema mexicana table cream

Herdez salsa (optional)

Chipotle Tabasco (optional)

Directions:

Lay out your tostadas (or toasted tortillas). Spoon on refried beans and beef. Top with lettuce, tomatoes and queso fresco. Drizzle with crema mexicana. Serve!
