Broccoli Cheese Soup
I had an Instagram follower reach out to me this week that her baby's doctor said they needed to put more broccoli in to her baby's diet. I got so excited to give her broccoli ideas, I decided to include this Broccoli Cheese Soup in our free newsletter this week. It's a family favorite. My three year old especially loves it.
Broccoli Cheese Soup
6 cups fresh broccoli (4 cups frozen)
1 large carrot (not baby carrot), peeled and sliced
1/3 cup butter
8 cups chicken broth
2 cups water
3 cups cheddar cheese, shredded
10 slices American cheese
2 tsp garlic salt
2 tsp onion powder
1/2 tsp pepper
1 cup flour
First step, chop the broccoli into bite size pieces. Then steam the broccoli and carrot. You want the broccoli barely fork tender, definitely still in the green color. Otherwise you will have brown broccoli soup.
In a sauce pan, melt the butter and stir in water and flour little by little while whisking constantly to make a roux. You will probably need about 2 cups of your chicken broth to add in as well.
When it's nice and smooth, add in the broccoli and remaining ingredients. Stir together until cheese is melted and ingredients are combined.
