Chicken Sausage Sheet Pan Dinner
Ingredients:
chicken sausage links, sliced
sweet potato, peed and diced
red bell pepper, seeded and diced
1 cup celery, chopped
1/2 red onion, chopped
2-3 TBSP oil oil for drizzling
1 TBSP cumin
1/2 TBSP garlic powder
1/2 TBSP Tony Chacherie’s Creole Seasoning
splash of lemon juice
Directions:
Preheat oven to 400 F degrees. Line a baking sheet (one with a lip) with aluminum foil. Lay sausage and vegetables on the pan. Sprinkle with seasoning, drizzle with olive oil. Stir around until evenly coated. Bake 15-20 minutes until veggies are fork tender. Squirt a bit of lemon juice over the top.
Sometimes we like to eat this over a bed of rice, but this also stands great on its own. This is also really nice served with our Broccoli Slaw.
Enjoy and serve!
