Nachos with Mixed chips
Maybe it's just at our house, but we always seem to have a handful or two of chips at the bottom of the bag that no one wants to eat. The pieces are pretty small, even a sampling of crumbs, and they just sit there. Pretty soon you have several bags of chips with just a little bit left over. Anyone else have this problem?
Well, here is our solution: Make a big tray of oven baked nachos. It's super easy, and covering all those bits of chips in toppings and cheese seems to help those bits of chips slide down into the kids' bellies in a jiffy.

Nachos with Mixed Chips
Dump your leftover chips on to a cookie sheet. (I like to throw down some parchment paper underneath first for easy clean up.)
Spoon on refried beans. Then layer with cheese. We used American and shredded Colby Jack in the video. Spoon on salsa. Drizzle cilantro ranch dressing on top. (Recipe for that to come soon)
Bake in the oven at 450F degrees for 8-10 minutes until cheese is starting to bubble, but before the chips start to burn.
Top with a sprinkle of cilantro and a few dollops of sour cream.
