Pitas
These little beauties were discovered on accident. I was making my pretzel rolls using my dinner rolls recipe, and accidentally left out the yeast!! Ahh!! I didn't want to waste the dough, so I tried making tortillas. They were just really fat and the texture wasn't nice at all. So I attempted making pitas next- and they turned out great!!
Pitas
5 3/4 cup flour
1/2 cup veg oil
1/2 cup sugar
2 1/2 tsp salt
Put all ingredients into a mixer (bread machine or mixer with a dough hook). Mix for 30 minutes. Let rest overnight.
Roll into balls. Then grab your rolling pin and roll them out flat.
Preheat oven to 500 F degrees. Bake for 5 minutes.
Pull off of the pan when it's still hot. Put inside a brown paper bag, fold down the top and cover with a wet towel and let rest to soften the pitas.
Let it cool for about 15- 20 minutes. Slice in half and then slice little slits to make pockets in the pitas.
We served ours with the salsa beef we use for our taquitos. Next time I want to serve them Greek style with chicken, my hummus and tzatziki sauce.
