Raspberry Mango Jam Bars
This is the first time I’ve ever made a “jam” cookie. I am completely sold!! I think the only way this could be better is if it was made with fresh homemade jam. The jam I bought was still pretty amazing. I found it at Costco: raspberry, mango, orange. So tasty! This recipe was inspired by Betty Crocker’s Cookie Jar Cookbook.

Raspberry Mango Jam Bars
1 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 tsp vanilla
2 1/2 cups flour
1 tsp baking powder
1/2 cup raspberry mango orange jam (from Costco)
Orange Glaze
1 cup powdered sugar
1/2 tsp vanilla
1 1/2 tsp fresh squeezed orange juice
1/4 tsp orange zest
Mix together until smooth.
Directions:
Cream together butter, sugar, egg and vanilla. Mix in flour and baking powder.
Preheat oven to 350 F degrees. Divide dough into 4 parts. Mold into long strips. Place on a cookie sheet. Press measuring spoon into the dough to create indentations in the dough. Put about 1 1/2 tsp of jam in each indentation (filling the craters).
Bake until edges are light brown, about 10-12 minutes.
Cool while you mix up the Orange Glaze. Drizzle glaze onto the cookie strips. Cut into triangles.
