Recipes from the Pantry & Freezer
The beauty of these recipes, is that they are all based on ingredients that you can store in your pantry or your freezer. They are all great for when you need to stock up and are hunkering down for weeks. We have been enjoying these recipes while we have been social distancing ourselves because of COVID-19.
Let’s talk about substitutions for some of our fresh ingredients. In the recipes that call for milk, powdered milk reconstituted is a great substitute. You can also use a rice or nut milk that may hang out fine in a box on your pantry shelf until you need to use it. If you don’t have eggs around, we often use a powder called “Egg Replacer” that is just a powder you mix up with water. It works really well when you are baking. For the vegetables listed in the recipes, you can swap fresh out for frozen. If you are out of bananas, just skip that step. You may just want to add a bit of sugar to sweeten it up, or try adding dried bananas or other fruit. Also, if you don’t have a specific veggie listed, swap it out or leave it out. No big deal. We just do our best with what we have. Experimenting can be really fun!
