Roasted Yellow Squash with Basil & Parmesan
Our garden is flourishing!! I love this time of year. We have to enjoy it before the Texas heat sets in. This week we have fresh yellow crook neck squash, basil and tomatoes ready to pick. They inspired this delicious healthy side dish. We served it up with our Garlic Herb Chicken Breasts and Watermelon Mint Salad- so tasty!!!

Roasted Yellow Squash with Basil & Parmesan
ingredients:
4 yellow crookneck squash, sliced length wise
8 cherry tomatoes, sliced
10 fresh basil leaves
1 tsp garlic powder
1 tsp salt
1 tsp pepper
freshly grated parmesan cheese
directions:
Place yellow squash on a greased baking sheet. Top with cherry tomatoes. Sprinkle with garlic powder, salt and pepper. Then layer with basil and parmesan cheese.
Bake at 400 F degrees for 18 minutes.
The basil turns black when you bake it. For a stronger basil flavor, put it on after baking. My family likes it better cooked.
