Pan Fried Honey Lime Chicken Thighs

The beauty of these chicken thighs, is that they can be used in Mexican dishes and Thai dishes. I love the versatility- especially when using them as leftovers. These chicken thighs are so bright and sweet- just delicious!! I love these on our Thai Chicken Salad. I also love the color that you get on the chicken from pan frying it. The caramelizing from the pan adds such great flavor.

Pan Fried Honey Lime Chicken Thighs

Ingredients:

4 boneless, skinless chicken thighs

2 TBSP olive oil

1/4 cup honey

juice from 1 lime

chili powder

garlic powder

salt

pepper

fresh cilantro, chopped (optional garnish)

Directions:

Grab a skillet and put it on your stove at medium high heat. Let your pan heat up for a second while you grab the olive oil. Pour in the olive oil and place the chicken thighs in the pan. Sprinkle with chili powder, garlic powder, salt and pepper. Cook for 5 or so minutes. Flip to the other side and sprinkle again with chili powder, garlic powder, salt and pepper. Cook for another 5 minutes or so. Flip again. Now this last segment of cooking time really depends on how thick your chicken thigh is. You want to make sure the internal temperature reaches 165 F degrees to be safe to eat.

While the chicken is cooking, whisk together the honey and lime juice. When the chicken is about finished, pour the honey-lime mixture over the chicken. Flip the chicken over a couple times to make sure it’s nice and coated. Garnish with some chopped cilantro.
