Berry Cream Cheese Spread
I’m so happy to finally have this ready for you guys. You might remember our video on IG TV when we were making bagels and this cream cheese made it’s first debut. It’s fabulous. So much lighter, fluffier and flavorful than store bought. I am constantly trying to think of new things to put it on- waffles, french toast, fresh fruit, muffins, pretzels, graham crackers… And this morning I had it on our whole wheat oatmeal pancakes. Heaven! I plan on bringing this to holiday parties this year- it would be a delicious, fast and easy appetizer.

Berry Cream Cheese Spread
Ingredients:
2 (8 oz) packages cream cheese, softened
1 cup frozen mixed berries, mostly thawed (I thaw them in the microwave or the stove)
1/2 cup brown sugar (I like the dark brown)
3 TBSP butter, softened
1 tsp vanilla
1/4- 1/2 tsp of lemon zest (Depending on how lemony you want it. It adds an amazing brightness!!)
Directions:
Mix together in a food processor until it is velvety smooth. And that’s it! You could also use a mixer, but you will have to beat the mixture for longer. I like it best when it’s been refrigerated for a couple hours and the sugars have blended into the cream cheese and the flavors are all blended. But sometimes it’s hard to keep myself from eating it right away!!
