Homemade Poptarts - Such a Fun Breakfast or After School Treat!!
We are obsessed with these Homemade Poptarts at our house!! They are made from a homemade golden, flakey pie crust, filled with flavorful berry jam and drizzled with a tangy and sweet frosting. Is your mouth watering as much as mine is?!! My kids love it when we also top them with colorful sprinkles. Wouldn’t these be perfect for your Valentines Day breakfast or after school snack?!!

Homemade Poptarts
There are a few elements to get together separately before we put everything together to bake the Poptarts. Start out making the pie crust.
Pie Crust
Ingredients:
2 cups flour
3/4 cup butter
1 TBSP sugar
1/2 tsp salt
1/2 cup ice water
Directions:
Put 2 cups flour, 1 TBSP sugar and 1/2 tsp salt in a food processor. Slice butter into 3-4 chunks and add the butter into the food processor with the other ingredients. Pulse until you have pea sized bits of butter. Add 1/2 cup ice water just until dough comes together. Touch it as little as possible.
Divide dough in half and shape into round disk. Let it rest in the refrigerator for 30 minutes.
Next I pull out my pastry frame. I had never seen one of these until I was at my friend’s house making a pie- this is a game changer!! My pie crusts were always sticking to the counter or parchment paper. No more!! Just sprinkle a little flour onto the canvas surface of the pastry frame, and dump the dough on there. Still touching the dough as little as possible (the butter staying cold is key!), roll your pastry dough out until it is nice and thin- about a 12 inch circle. I also LOVE my rolling pin cover. It keeps the dough from sticking to the rolling pin. So great.
While the pie crust is chilling, you can work on the filling and the frosting.
Filling
Ingredients:
1/2 cup fruit jam
1 TBSP cornstarch
1 egg
Directions:
Whisk together 1/2 cup jam and 1 TBSP cornstarch. Whisk egg separately in another bowl.
Frosting
ingredients:
1 cup powdered sugar
2 TBSP jam
1 TBSP milk
1/2 tsp lemon juice
1/2 tsp vanilla
sprinkles (optional)
Directions:
Mix together 1 cup powdered sugar, 2 TBSP jam, 1 TBSP milk, 1/2 tsp lemon juice, 1/2 tsp vanilla until smooth.
Putting it all together
Once the pie crust is done chilling, and you’ve mixed together the filling and the frosting, it’s time preheat the oven to 400 F degrees and cut out the poptarts.
Once the dough is rolled out, cut into 20 squares of similar size.
Place 1 TBSP of filling onto one of the dough squares. Brush all four edges with the whisked egg. Place another pastry dough square on top and crimp all the edges with a fork. Poke the top with a fork to make air vents.
Continue with the rest of the pastry dough and filling until you have made about 10 poptarts.
Bake at 400 F degrees for about 15 minutes.
Take poptarts out of the oven and slather with frosting. You can also top with sprinkles if desired.
