Halal Bowls - Your Family's New Favorite Dinner!!
This Halal Bowls recipe has been such a long time coming. It’s bursting with flavor, color and texture. You can make it as a salad, a bowl or a wrap- however you like it best. My kids ask me to make this on a weekly basis- they LOVE it!
These bowls consist of 3 different recipes: Chicken, Turmeric Rice and Creamy White Dill Sauce (4 recipes if you are also making the delicious Homemade Garlic Naan Bread!). Each component stands on their own feet, but together - pure magic in your mouth!
Please, don’t be scared by the amount of seasonings and spices. I often avoid recipes that have this many ingredients, but your family is going to LOVE THIS SO MUCH, it will be 100% worth it to have these items in your kitchen cupboard.

Halal Bowls
Chicken
Ingredients:
8 chicken thighs, boneless, skinless
3/4 cup plain Greek yogurt
3 TBSP olive oil (plus a drizzle for cooking)
2 TBSP lemon juice
2 tsp cumin
1 tsp garlic powder ( or 4 garlic cloves, minced)
1 tsp turmeric
1 tsp oregano
1 tsp salt
3/4 tsp paprika
1/2 tsp ground coriander
Directions:
In a large bowl or a gallon sized ziplock bag, put 3/4 cup plain Greek yogurt, 3 TBSP olive oil, 2 TBSP lemon juice, 2 tsp cumin, 1 tsp garlic powder, 1 tsp tumeric, 1 tsp oregano, 1 tsp salt, 3/4 tsp paprika & 1/2 tsp ground coriander.
Mix together and then add chicken. Stir chicken thighs around in mixture until coated on all sides. You can make this ahead— even as far as the night before if you need to.
When ready to cook, get out a large skillet, put on stove to medium high. When the pan is heated, do a quick drizzle of olive oil and place chicken in the pan. Discard remaining yogurt mixture.
Cook chicken, turning every few minutes until cooked completely through- 165 F degrees. Take it out of the pan and let rest for 10 minutes before slicing.
Turmeric Rice
ingredients:
4 TBSP butter or olive oil
1 tsp turmeric
1/2 tsp cumin
1/2 tsp salt
3 cups basmati rice
5 cup vegetable or chicken broth
Directions:
Mix 4 TBSP butter or olive oil, 1 tsp turmeric, 1/2 tsp cumin, 1/2 tsp salt in a medium-large pot*. Add in 3 cups of basmati rice, stir and saute over medium heat until most of the rice has begun to change color. Add 5 cups vegetable (or chicken broth) and bring to a boil. As soon as it comes to that boil, cover and turn heat down to low and simmer for about 20 minutes and rice is cooked through. Take off heat.
*If using a rice cooker (my preferred method!), use the saute setting to melt the butter and cook the rice in the seasonings. Once the rice has begun to change color, add the broth and turn to the white rice setting to finish cooking.
creamy White Dill Sauce
ingredients:
1/2 cup plain Greek yogurt
1/2 cup mayo
1/4 cup milk (+ more if you want a thinner consistency)
2 TBSP vinegar
1 TBSP lemon juice
1/2 TBSP sugar
2 tsp dill
1 tsp garlic powder
1 tsp oregano
1/4 tsp salt
Directions:
Whisk all ingredients together and chill in the fridge until ready to serve. This is great to make ahead of time so the flavors have time to blend. If you want a thinner sauce, add milk little by little until desired consistency.
Other ingredients for serving:
lettuce, shredded or chopped
tomatoes, diced
homemade garlic naan bread, optional (but REALLY you’re going to want it!!)
air fried chick peas, optional (great for a little crunch)
harissa sauce, optional (to give it a kick of heat)
Putting it all together !!!
In your bowl, add a scoop of rice, chicken, lettuce, tomatoes, (+ chick peas & naan, if using). Drizzle with creamy white dill sauce. (To spice it up, add a bit of harissa sauce!)
Another option, it to treat your naan bread like a wrap! Layer, rice, chicken, lettuce, & tomato and drizzle with creamy white dill sauce.
