Delicious Mexican Side Dishes

Pico De Gallo
Ingredients:
6 tomatoes, chopped
1/2 white onion, chopped
1/2 jalapeño, seeded & chopped very small
Juice from 1 lime
1/2 cup cilantro, chopped
1/8 tap garlic powder
Salt and pepper to taste
Directions:
Stir together.
Guacamole
Ingredients:
4 avocados, smashed
1/2 cup pico de gallo
Salt to taste
Directions:
Stir together.
Vegetarian Refried Beans
Ingredients:
2 cans pinto or black beans, drained & rinsed
1/2 cup pico de gallo or salsa
1/2 cup vegetable broth
Salt and pepper to taste
Directions:
Place in a microwave safe bowl. Heat in the microwave for 2-3 minutes. (You can also do this on the stove- heat until steamy).
Put in a blender and pulse until smooth.
Mexican Rice
There are 2 ways we make this rice: in the Rice Cooker and on the stove. We will explain each for you.
Ingredients (when using a rice cooker):
When using rice cooker- scoop is 3/4 cup:
4 scoops jasmine rice
1 cup salsa
Fill with vegetable or chicken broth until line 4
Directions:
Stir together.
Plug in cooker. Turn on. Then press white rice button.
OPTIONAL: When done cooking:
Add juice from half a lime and 1/4 cup chopped cilantro, if desired - stir together
Ingredients (when cooking on a stove top):
3 cups jasmine rice
1 cup salsa (or pico)
5 1/2 cups vegetable or chicken broth
Directions:
Bring broth to boil. Add salsa and rice. Give a quick stir. Cover with lid and turn temp down to low. Let simmer for about 15-20 minutes until rice is tender and flaky with a fork.
OPTIONAL: When done cooking:
Add juice from half a lime and 1/4 cup chopped cilantro, if desired - stir together
