GIANT Peanut butter Chocolate Chip Cookies
The other day I woke up on the wrong side of the bed. I had stayed up way too late, been up with kids in the night and woke up to a fight with my son. The morning continued along those lines and I felt awful about it when my kids had left for school. I decided I needed an attitude adjustment and to apologize.
It had been awhile since I had created anything new in the kitchen, so I got to work experimenting with these GIANT cookies. They turned out fabulous. My kids were surprised and thrilled to have these huge peanut butter chocolate chip cookies waiting for them. This is a very simple recipe. You don’t even have to refrigerate the dough if you’re in a rush!

GIANT Peanut Butter Chocolate Chip Cookies
Ingredients:
1/2 cup sugar (plus 1/3 cup for rolling cookies in- optional)
1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup Crisco shortening
1 egg
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
2 cups chocolate chips
Directions:
Preheat oven to 375 F degrees. Cream together sugar, brown sugar, peanut butter, butter, shortening and egg. Mix in flour, baking soda and baking powder. Stir in chocolate chips.
If you have a large cookie scoop (that will make a ball our of about 1/4 cup of dough), get it out and start scooping cookies into balls. If not, snag a spoon and scoop out about 1/4 cup of dough and roll it into a ball. If you’d like, you can then roll the ball in sugar.
Place the cookies onto a baking sheet and press down gently on the top to flatten them out just a bit. Bake until edges are barely a light brown, about 10 minutes.
