Our Favorite Pizookie Recipes!
Pizookies are one of our family’s favorite desserts. Easy as baking a cookie, but you bake it in a ramekin dish instead of a cookie sheet. When you bak it, leave it just a touch under done, and throw a scoop of ice cream on top (Blue Bell, if you’ve got it!). It’s gooey, rich, with just a touch of crunch on the cookie top. Make this for your friends- they will love you!!

Peanut Butter - Rocky Road Pizookies
This is our newest pizookie recipe, and I will be making this way more often!! I’m going to share it with you here. (Keep scrolling for the other pizookie recipes.)
Ingredients:
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup Crisco shortening
1 egg
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
Rocky Road Ice Cream - Blue Bell is my absolute favorite!!!!!
Directions:
Preheat oven to 375 F degrees. Cream together 1/2 cup sugar, brown sugar, peanut butter, butter, shortening and egg. Mix in flour, baking soda and baking powder. Press dough into ramekins. Bake until edges are barely a light brown, about 8-10 minutes. Pull out of oven, top with a scoop of Rocky Road Ice cream and eat immediately.
Chocolate Chip Cookie Pizookies
This is definitely our family’s favorite pizookie recipe. These make an appearance at almost every birthday in our home. The base is a chocolate chip cookie and the ice cream is your classic vanilla. You can’t go wrong with this classic!
Oreo and Chocolate Chip cookie dough Pizookie
These pizookies have a rich chocolately base with cookie dough ice cream as the topper. It’s very rich. Grab a class of milk to go with it!
Andes Mint Chocolate Chip Pizookies
These are my favorite for the holidays. I love chocolate and mint together- especially at Christmas!! The base of this cookie is chocolate goodness with Andes mints melted on top, and then combined with a scoop of mint chocolate chip ice cream.
Triple Cookie Pizookies
These were invented by accident when we had some friends over for a pizookie bar. We mixed up several different cookie doughs and bought a few different flavors of ice cream. Everyone got to make their own combinations and it was so fun!! These cookies have a chocolate, peanut butter and chocolate chip cookie dough, topped with a scoop of vanilla ice cream. They are fantastic for those of you who have a hard time picking what flavor to make - just do them all!!
