Roasted Peaches & Cream
This is a very flavorful, summery dessert. With fresh peaches off the tree, this cannot be beat!! Just a few ingredients and quick prep, but an amazing taste your family and friends will love! Also included is a lighter version for those watching their waistlines. I was afraid cutting back on the calories would be a big disappointment when my family was all eating the original version- but I was very happily surprised with the modification!!

Roasted Peaches & Cream
Ingredients:
3 large peaches
cookie dough ice cream (Blue Bell is our brand of choice)
sprinkle of brown sugar
sprinkle of cinnamon
crispy coconut roll (optional) AMAZON LINK BELOW!!
pecan pieces for garnish (optional)
Directions:
Slice peaches in half. Remove pits. If they are free stone peaches, this should be very easy, if they are cling stone peaches, you will probably have to cut around the pits. Lay peel side down on a baking sheet. Sprinkle with brown sugar and cinnamon. Bake at 425 F degrees for about 10-15 minutes, you should see the juice dripping a bit. Place in a bowl with ice cream and top with a **crispy coconut roll & pecans (optional).
*If you are looking for a lighter version substitute the ice cream for fat free Greek vanilla yogurt.

Serve warm. Super simple- but soooo good!! This would also be incredible on the grill or served along with some warm chocolate chip cookies!!
