Peanut Butter Chocolate Chip Cookie Dough Ice Cream Sandwiches
My 3rd grader was assigned to bake something to practice her math skills (my personal favorite way to learn fractions), so I was very excited to create a new recipe to accommodate the assignment. Let me introduce you to our brand new dessert recipe: Peanut Butter Chocolate Chip Cookie Dough Ice Cream Sandwiches!! It is quite the mouthful to say, but the tastiest mouthful to eat!

Peanut Butter Chocolate Chip Cookie Dough Ice Cream Sandwiches
INGREDIENTS:
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup Crisco shortening
1 egg
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder
½ cup mini chocolate chips
Bluebell Chocolate Chip Cookie Dough Ice cream
DIRECTIONS:
Cream together 1/2 cup sugar, brown sugar, peanut butter, butter, shortening and egg. Mix in flour, baking soda and baking powder. Refrigerate 1 hour.
Preheat oven to 375 F degrees. Mold dough into balls about 1 inch in diameter. Place on a cookie sheet. Make a criss cross pattern on top with a fork. Bake until edges are barely a light brown, about 8-10 minutes.
Let cool for 20-30 minutes. Get out your ice cream. Make sure it is a little bit soft. Scoop ice cream onto the bottom of one of the cookies. Using flat palms on both of your hands, press another cookie on top to create an ice cream sandwich.
Roll ice cream sides in the mini chocolate chips. Eat immediately.
