Unicorn Oatmeal Blondies
I developed this Unicorn Blondies recipe when my little girls were really into unicorns and all things rainbow. Are your kids unicorn crazy?? I admit, this phase does bring me back to my childhood, so I’m not opposed to all the rainbows and sparkles. Rainbow Brite and My Little Ponies are a piece of my favorite pastimes!
You can use multicolored chocolate chips or pastel M&Ms! I saw these rainbow chips at the grocery store and have been stewing for weeks over how we could best use them. I think these oatmeal blondies are the perfect way to showcase them! Buttery, sugary, with just enough oats that you don’t feel completely terrible feeding them to your kids (or yourself!!). Perfect for a birthday party, baby shower or as thank you goodies!

Unicorn Oatmeal Blondies
Ingredients:
1 cup brown sugar
1 cup white sugar
1/2 cup butter, softened
1/2 cup margarine, softened (I’m not usually a margarine fan- but this makes a huge difference!)
1 1/2 tsp vanilla
2 eggs
2 cups flour
1 cup quick oats
2 tsp baking powder
1/2 tsp salt
1 cup white chocolate chips
1 cup rainbow chips
Below are the rainbow baking chips we used
Directions:
Cream together everything except the flour, oats and chips. Add flour and oats, mix again. Then stir in white chocolate chips and rainbow chips. Press into a 9x13 glass pan and bake 350 F degrees for 25-30 minutes, until golden around the edges.
My biggest tip at this point is that these are a disaster to serve warm. They are delicious, but end up to be quite a mess. Let them cool completely and they will be fabulous cookie bars.
