Peanut Butter & Rocky Road Pizookies
Pizookies are probably my very favorite dessert. There is just something magical that happnes when the warm, ooey gooey cookie is scooped into your mouth along with a sweet, creamy, cold bite of ice cream! Ahh it’s just so delicious!! We have made pizookies with many flavor combinations, but as a huge chocolate ice cream lover, this is my new favorite: Peanut Butter Cookie topped with Rocky Road Ice Cream. So good!!
We have had such a fabulous time gathering friends together for pizookie parties. We make a few different batches of dough, have our friends bring the ice cream, and set up a pizookie bar! The kids love putting different flavors together and even combining flavors to make it even more fun!

Peanut Butter & Rocky Road Pizookies
INGREDIENTS:
1/2 cup sugar
1/2 cup brown sugar
1/2 cup peanut butter
1/4 cup butter, softened
1/4 cup Crisco shortening
1 egg
1 1/2 cups flour
3/4 tsp baking soda
1/2 tsp baking powder

DIRECTIONS:
Preheat oven to 375 F degrees. Cream together 1/2 cup sugar, brown sugar, peanut butter, butter, shortening and egg. Mix in flour, baking soda and baking powder. Press dough into ramekins. Bake until edges are barely a light brown, about 8-10 minutes. Pull out of oven, top with a scoop of Rocky Road Ice cream and eat immediately.
